Regulating the temp for smoking with charcoal and smoking woods takes practice, but its as much of how much charcoal and wood to use as it is adjusting the dampers. Cant say enough about the grill especially considering its very reasonable price. Thanks Char-broil and Home Depot from Homedepot.com I found the rating true... I love the capacity for grilling... I come from a large family and the Santa Fe fits the bill for my family; the grilling area is large enough for large quantities to be grilled or bbq'd.
